  • For each cup of whole grain red rice, use 2 cups water/broth if soaking for at least 2 hours.

Thai black rice, Riceberry is one of the popular rice varieties in Thailand, a cross of two renowned rice strains in the country. Riceberry is a cultivar of rice that was created by hybridizing Hom Nil (black jasmine rice) with Khao Dok Mali 105 (another type of jasmine rice). Unlike most varieties of rice, Riceberry has a strong fragrance that's savory and almost meaty in the aroma. Because it's a whole grain rice, the bran gives it a similar texture to brown rice; however, the interior is tender, nutty and a little sweet. It's a long grain rice that has a reddish black color when raw, that turns purplish black when cooked. Because Riceberry is a whole grain rice, the bran and germ have not been milled off; however, unlike brown rice, it cooks in the same amount of time as white rice. The purple hue of this rice is caused by anthocyanins, which are a naturally occurring pigment and antioxidant. Riceberry differs from other whole grains – it cooks relatively fast and is prepared the same as jasmine rice. Cooking Method :
  • Rinse the rice thoroughly to remove any starch and dust. Place in a heavy bottomed pot using 1/1/2 cup of water for every cup of riceberry.
  • Bring to a boil and then reduce heat to the lowest setting possibe.
  • Remove from heat and allow the rice to rest for 10 minute before covering. Soaking for an hour beforehand reduces cooking time. Discard soaking water.

Contrary to popular belief, this term refers to the rice and not the fish. Sushi rice is traditionally Japanese short-grain rice and differs from other types of rice grains due to its sticky consistency. Short Grain Rice is perfect for recipes that require compact and sticky rice. In contrast to long grain rice such as fluffy Jasmine Rice, short grain rice contains more starch, which is released while cooking and helps to create a firm consistency. This rice is specially designed for making Asian recipes like sushi and onigiri so that it is easier to roll and eat with utensils like chopsticks. Cooking Ratio : The ideal ratio for cooking short grain rice is 1½ :1, meaning 1½ cups of water per each 1 cup of rice. It can be cooked over the stove, in the microwave, in a slow cooker, rice cooker or Instant Pot.

  • Rinse rice thoroughly to remove the starch.
  • Soak the rice in equal quantity water for 60 min.
  • Add an additional one-fifth cup of water for every cup of rice.
  • With the lid on, cook on a low flame until it starts boiling.
  • When it begins to boil, take off the lid and leave it on a high flame until the water evaporates from the surface (appx. 5 min.)
  • Gently fluff the rice and serve.
Making the perfect sushi rice recipe is relatively easy and only requires a few simple ingredients:
  • Rice : Short-grain sticky Japanese rice is the best to use as it has a higher starch content than longer grain varieties.
  • Water: Regular tap water will work just fine, but filtered water is even better.
  • Rice Vinegar: Do not substitute this for any other type of vinegar or even rice wine vinegar. It will taste drastically different!
  • White sugar: Regular white sugar is the best to use and it is not recommend to substitute it for any other type of sugar.
  • Oil: Vegetable or avocado oil is recommended here. Other oils with a strong flavor that will be too overwhelming and will make it taste a bit "off."
  • Salt: Adding salt to your dish is optional and you can add as much or as little as you would like to season it.
